In 2000, Perez opened his
flagship restaurant,
Dragonfly, a high-end
Chinese restaurant that
also doubled as an upscale
lounge. Dragonfly was
groundbreaking at the time
and quickly gained $7.2
million annual gross
revenue by year 3. While
operating Dragonfly for 15
years, Perez expanded his
restaurant portfolio to a
further 11 concepts, and
continues to venture to
LA.
